  • 1 tsp (5ml) Ground Cinnamon
  • 4 tsp (5ml) Ground Espresso
  • 1/4 oz (120ml) Semi-Sweet Chocolate
  • 1/2 cup (60ml) Unsalted Butter
  • 1/4 cup (118ml) Granulated Sugar
  • 2 cups (60ml) Brown Sugar
  • 2 Eggs
  • 1 tsp (5ml) Vanilla Extract

Chocolate Mousse:

  • 2 oz (60ml) Semi-Sweet Chocolate
  • 2 tbsp (30ml) Unsalted Butter
  • 2 Eggs
  • 1/4 tsp (1.25ml) Salt
  • 1/8 tsp Cream of Tartar
  • 1/4 cup (60ml) Granulated Sugar
  • 1/2 tsp (2.5ml) Vanilla Extract
  • 1/4 cup (60ml) Heavy Cream

White Chocolate Mousse:

  • 4 oz (120ml) Cream Cheese
  • 3 oz (90ml) White Chocolate
  • 1/4 cup (60ml) Unsalted Butter
  • 1/4 tsp (125ml) Salt
  • 1/2 tsp (2.5ml) Vanilla Extract
  • Chocolate Ganache:
  • 3 oz (90ml) Semi-Sweet Chocolate
  • 3 tbsp (45ml) Heavy Cream

  1. Preheat the oven to 350°F (175°C). Grease two 8-inch cake pans.
  2. In a medium bowl, mix the dry ingredients for the chocolate cake.
